Ingredients

4-5 Boneless Chicken Thighs

5 cloves of Garlic

1/2 cup Honey

1/2 cup Vegetable Stock

1 tbsp Apple Cider Vinegar

2 tbsp Light Soy Sauce

 

Method

OK this one is really quick to prepare and really quick to cook. We used it to make up some wraps with salad for a light dinner but you can eat it with rice too.

Trim your chicken thighs to remove any leftover fat or yucky bits. Season them up with the Honey, Soy & Chilli rub from The Smokey Carter or your rub of choice. Add a little oil to them to help the rub bind to the chicken and this will also stop them sticking to the griddle.

Add the chicken to the griddle and sear it on both sides. At the same time, preheat your skillet on the Blackstone with some oil. While the chicken is cooking, you can peel and finely mince your garlic. Add the garlic to the skillet and cook it for a few minutes before adding the honey, vegetable stock, apple cider vinegar and soy sauce to the skillet and bring it to a simmer.

Check the internal temperature of your chicken with the Thermapen and when it reaches 82-84c, add the chicken into the sauce. Spoon the sauce over the chicken and allow it to simmer until the sauce thickens then you are ready to eat!
